Semi-homemade Ice Cream Sandwiches (3/25)

What you need: soft chocolate chip cookies (store bought, but you can make your own!), ice cream (you could make this as well), ice cream scoop   

I used the whole pack and froze them in an airtight container.  We ate this batch in a couple of days.  The next time we made them, it took a little longer to eat our way through and I noticed the ice cream started to get discolored so I would suggest individually wrapping each one if you aren't going to eat them within a week!
